Sweet Corn In Coconut Milk

Ginataang Mais (Sweet Corn in Coconut Milk)
INGREDIENTS:
  1. 2 cans of 13.5 oz coconut milk
  2. 1/2 cup sweet rice (malagkit)
  3. 1 can of 15 oz sweet corn kernels
  4. 1/2 cup thinly sliced canned jack fruit
  5. 1 teaspoon vanilla extract
  6. 1/4 cup condensed milk
  7. 1/4 cup sugar (more if you prefer)


COOKING DIRECTIONS:
  1. Place casserole over medium heat.
  2. Add coconut milk and sweet rice.
  3. let it boil then turn heat down to low.
  4. Keep stirring to prevent rice from sticking.
  5. Let it simmer for about 10 minutes.
  6. Add corn kernel, jack fruit and vanilla extract.
  7. Let it simmer for another 4 minutes or until rice is fully cooked.
  8. Add sugar, and condensed milk and let it cook for another 2 minutes.
  9. Serve hot.
